I remember watching that as well. I once heard that a cruise ship is powerful enough and fast enough to theoretically waterski behind. Perhaps at those speeds, it may play in as a factor. But your average laker doesn't commonly top out any faster than 20 miles an hour or so. I think the record was by one of the footers who once got up to 25 on an open lake if I ever remember reading right.
