How many tons in a load

This is kind of tied in with the "Re: Balancing act" below. How does a loader or a ship know how many tons of a product has been loaded? Do they go by the water line markings on a hull? Or is their scales on shore or in the loading equipment? Is the way its done pretty acturate? How is this all done? Thanks. Dave
